The 14 allergens you must declare

Annex II of Regulation (EU) No 1169/2011 lists the substances or products causing allergies or intolerances that must be declared:

  • Cereals containing gluten (wheat, rye, barley, oats, spelt)
  • Crustaceans
  • Eggs
  • Fish
  • Peanuts
  • Soybeans
  • Milk (including lactose)
  • Nuts (almonds, hazelnuts, walnuts, cashews, pistachios and others)
  • Celery
  • Mustard
  • Sesame seeds
  • Sulphur dioxide and sulphites (above 10 mg/kg or 10 mg/l)
  • Lupin
  • Molluscs

How to fill in the chart, dish by dish

Start from each dish’s recipe or spec sheet, not just the main ingredients: bought stock may contain celery, puff pastry milk, cured sausage sulphites, the bread on the side gluten. Check your suppliers’ spec sheets for anything you do not make in-house.

When a recipe or supplier changes, update the chart the same day. An out-of-date chart is worse than none, because it gives people with allergies a false sense of safety.

Where the information must be

Decreto-Lei 26/2016 requires allergen information to be available “on any medium that allows the consumer to easily understand it”. A printed chart by the counter, or handed over with the menu, is one way to do that.

On a digital menu the information sits next to each dish, in the guest’s language. In Platerio allergens are only shown to guests after you confirm them — the AI can suggest, but it does not publish. See also how it works in a pastry shop and a seafood restaurant.

Frequently asked questions

Is an allergen chart mandatory in Portugal?

The law requires each dish’s allergens to be available on a medium the customer can easily understand (Decreto-Lei 26/2016, article 4(3)). It does not prescribe a format: a chart, the menu itself or another medium all work.

Is my chart saved?

It is saved only in your browser, on this device. Nothing is sent to our servers. Download the CSV to keep a copy.

Can I make the chart in Portuguese?

Yes. Switch to Portuguese at the top of the page to get the allergen names in Portuguese.
